Don't chase butterflies. Build a garden.
He signs the lease in February.
It’s not in Boulder proper — too expensive. It’s a corner spot in Lafayette, a brick building with big front windows. It used to be a sandwich place that didn’t make it through COVID.
Everyone tells him the same thing: “Restaurants are brutal.”
He knows. He’s been cooking in other people’s kitchens for twelve years. But this one will be his.
March is spent knocking down a wall. April arguing with the city about a grease trap. May watching his bank account shrink faster than he thought possible.
He buys used tables off Facebook Marketplace. A friend helps him build the bar top. His sister designs the logo.
By the time June rolls around, there’s a name on the window, a menu he believes in, and four employees who took a chance on him.
Opening night. Neighbors walk in. Friends bring friends. A couple from down the street says they’ve been “waiting for something like this.”
It’s not packed, but it’s steady.
He stands near the expo window pretending to check tickets, but really he’s just watching people eat the food.
This is what he wanted. Not scale. Not an exit strategy. Just to build something here — in a place where if you do it right, people notice.
There are hundreds of local stories like his. Restaurants opening. Shops expanding. Nonprofits stretching budgets. Owners doing the quiet calculus between survival and generosity.
They’re not looking for handouts. They’re trying to build something sustainable. They want to look sharp. They want to be proud of what their team wears. They want to keep saying yes to the community around them. They just don’t always have margin for everything at once.
And that’s where something new begins.
Enter Colorado Public Ink.
Launching in June 2026, Colorado Public Ink. When local businesses support each other, the entire county moves forward.
It’s about strengthening the people brave enough to sign the lease. The ones opening the doors. The ones still choosing to build something here.
And sometimes it starts with something as simple — and as practical — as a shirt.
Now through March 31st accepting applications for sponsors of CPI Boulder County.
